Lettuce Soup

From cool, refreshing salad to warm, cozy soup. Is there anything the humble head of lettuce can’t do?

Ingredients

1 tbsp. oil

4 c. chopped romaine lettuce

1 onion, diced

1 c. frozen peas

2 cloves garlic, minced

1 tbsp. fresh lemon juice

4 c. vegetable stock

1/4 tsp. black pepper

For garnish: add fresh mint, lemon zest, and sour cream! Or, follow your taste buds to whatever you think sounds good!

Instructions

1. Add the oil to a soup pot, heat over med. heat. Add the onion and cook until soft, about 5 min. Stir in the garlic and cook for a further minute.

2.  Add the stock, lettuce and peas, bring to the boil then reduce heat and simmer for 5 min.

3.  Stir in lemon juice and pepper.

4.  Served garnished with sour cream or plain yogurt, chopped fresh mint and lemon zest.
